Course Objectives: 
This course aims teaching the fundamental concepts of heat and mass transfer, derivation of the general heat and mass transport partial differential equations, their application to the special food process engineering operations. Simulation of these processes with computer programs and using these information in the analyses of the data obtained in the experiments performed in the laboratory.
Course Content: 

This course includes the theoretical knowledge and laboratory work of heat transfer, mass transfer and related food process unit operations.
